Garlic finely chopped
Olive oil or vegetable fat
Cold cooked waxy potatoes, chopped
Fresh tomatoes, chopped
Button mushrooms, chopped
Red and green peppers, chopped
One cup vegetable stock
Mature vegetarian Cheddar cheese, grated
1-2 slices wholemeal bread, crumbled
Saute the garlic in the oil and add the cauliflower and broccoli. Cook for 5 minutes, stirring continually. Add the other vegetables and continue to cook and stir until they begin to brown and ‘’sweat’’ their juices. Add the nuts. Use just enough oil to prevent everything burning.
Add chilli sauce to taste. Turn into an ovenproof casserole, and pour stock over the top. It should just moisten the dish, not swamp it. Cover with grated cheese and crumbled wholemeal bread. Grill on a high heat until browned and bubbly. Serve immediately!
